COFFEE ROASTING

During the roasting process, which takes about 10 min at 425F, a series of complex chemical reactions take place, which develops the characteristic coffee aroma and flavour. Most visible of the results is the change in size of the bean, caused by expansion of its cell structures and the change in colour, resulting from the carmalization of the sugars and other carbohydrates. Inside the bean over 600 different volatile oils form and, although they constitute less than three per cent of the end product by weight, without them coffee would neither smell nor taste of anything.
